Since 1975 Jean – Pierre and Colette Lallement opened their restaurant in 1975 in a village called Chalons Sur Vesle a few kilometers from Reims. At this time, the Assiette Champenoise was only a gourmet restaurant and did not have a hotel. In 1986, they decided to expand and moved to Tinqueux, just near Reims. The bourgeois house they move into is completely transformed and becomes a hotel-restaurant. At the end of 2010, major construction work was undertaken and new suites were created.
